What’s for Dinner?

You know how you love getting a good recipe from your best friend and it turns into a family favorite?  Today is your lucky day!  I have three recipes that I have recently made that I found on Pinterest.   All of them are easy and really yummy.  I wish I had taken pictures of what I made, but the pictures on Pinterest are a way more pretty then anything I would have taken.   So here we go!  Check out the recipes and RUN to the store now and get the ingredients you need, you will not be disappointed in any of them.

This recipe would be perfect now with fresh sweet corn hitting the markets.  It has a nice smoky flavor and you are hit with the sweetness from the corn, the salty from the bacon and a nice smokiness from the paprika.  It was delicious!  I served this with a nice loaf of whole grain crusty bread.  The kids even liked this soup, so that is a winner in my book.   The recipe stated that as stated it served 2, so I doubled the recipe and we had more than enough.  My husband and I each had one and half bowsl and the kids each had a small bowl.  There was enough left over for two small bowls to eat later in the week.  If you don’t like shrimp, I think this soup would be good with shredded chicken or roasted sweet potatoes.

These were fantastic!  We love a good pancake in our house and have them for dinner at least twice a month.  When I saw these on Pinterest I was eager to try them out, they just looked so yummy. My pancakes were not as fluffy as the picture probably due to old baking powder, but they were still fabulous.  Don’t leave out the cinnamon sugar topping; they add that special yumminess to the pancakes.   For an extra special added fall touch, you could slice up some apples and sauté them with some butter and serve them over the pancakes with a sprinkle of the cinnamon sugar.  Next time I make them, apple topping it is.

I made these last night and they were delicious.  Mix up the spice rub and place it on the meat, cut up some vegetables and throw it all in the crock pot.  Eight hours later you have a fantastic dinner.  We loaded our tacos up with some sour cream, cheddar cheese, avocado, tomato and a little squeeze of fresh lime to bring out all the flavors of the steak.   The recipe calls for a two pound flank steak and it makes a lot once the steak is shredded up.  What I loved most is that I spent 15 minutes getting it together and spent almost no time preparing anything once it was in the crock pot.  Shredded some cheese, sliced the avocado and cubed some tomato and I was done!  Warmed up some black beans and dinner was served.

  1. The pancakes look good! I’m actually going to make apple spice waffles today. I think I found that recipe in Taste of Home magazine. I love referring to old cookbooks for recipes. I get so many new ideas. I also love going onto pinterest (when I have time) to find new recipes.
